Printed in 1887, perfected in New Orleans. Henry Ramos' version demanded twelve minutes of shaking and a line of men to do it — during Mardi Gras 1915 he had thirty-five on shift and still ran behind. In 1935 a Louisiana governor flew a bartender to New York just to teach the city how to make it properly. Gin, lemon, sugar, soda. Simple on paper. Never simple in the glass.

The bartender shook it for twelve minutes; when the glass reached the table nobody was talking.
